Australian Chef Aaron Brooks, has cooked his way around the world since 2001. From Vancouver to Boston he has orbited around cultures and cuisines, from pan-Asian to New England. Chef Brooks launched Miami EDGE, Steak and Bar in 2011 and has immersed himself in the culinary scene and its Latin culture ever since.

Known as Miami’s “Lambassador,” Chef Brooks continues to feature Aussie lamb, grilled chops served with bulgur wheat salad, tomato chutney, cucumber yoghurt and vadouvan. Aaaron will be working alongside the team from True Aussie Beef and Lamb whilst in Dubai to showcase the best of Australian produce at the Australian Pavilion.

With a focus on preparing quality products right, he maintains the integrity of the modern steakhouse by focusing on a “savour-more” concept, inviting diners to enjoy great flavours in an enhanced social dining experience.

Staying true to his motto “food has to be seasonal and relevant to where you are,” Chef Brooks has earnt the title of “Best Chef in Miami”. When he’s not in the kitchen, you’ll find Brooks sourcing local ingredients from nearby farms, cycling through Brickell or over to Key Biscayne, cooking at home with his family, educating Miami’s youth on the benefits of nutrition through the nonprofit organisation Wellness in the Schools, or supporting Miami culinary artisans.

Aaron brooks will be holding live cooking demonstrations at the Australian Pavilion forecourt on the 16, 18 and 19 of February.
